Happy Friday! Look what I made 🙂 My sister dropped in some cooking apples a week or so back and I finally put them to good use by making an apple crumble 🙂 Hmmmmmm crumble!
I used a recipe from my favorite cookery book “Delia Smith’s Complete Cookery Course”, but substituted normal flour for gluten and wheat free flour as I am gluten and wheat intolerant *le sigh*
The recipe for the topping is as follows:
- 8 oz (225g) flour
- 3 oz (75g) butter
- 3 oz (75g) demerara sugar
I had four large cooking apples, that I stewed in a little water and some sugar (to taste) until they were half mushy, half chunky (technical terms there!). Then I added some powdered cinnamon and ginger to taste, approx 1 teaspoon each. At this stage I also remembered to preheat my oven to Gas Mark 4 / 180°C / 350°F 🙂
While the apples were stewing I combined the flour and butter in a large dry bowl, using my fingers (I love this part), until all the butter was mixed in and I was left with something that resembled breadcrumbs. Then I added in the sugar and gave it another twirl around.
I greased my pie dish with a little butter, poured in the stewed apples and then carefully placed the crumble mixture on top. I put it into the oven on a high self for around 35minutes or until the topping has turned a light golden brown colour.
Because I wanted to make it look pretty, I cut out a heart shape from a piece of paper and used it as a template to sprinkle some icing sugar over the top 🙂 I also sprinkled a little more cinnamon over the top too! Et Voila! Then I proceeded to eat it all up 🙂 Well almost all of it, I did share some! And I am glad to report that it was scrummy and the perfect accompaniment to a cup of tea on a cold winters night 🙂
